Chunky Clam Chowder

Just because you are eating a ketogenic diet doesn’t mean you can’t enjoy a creamy bowl of clam chowder! This recipe is so simple using a pressure cooker, and it’s done in about 30 minutes. SERVES 8

6 slices bacon, chopped

6 garlic cloves, minced

1 onion, diced

2 cups chopped celery

2 pounds frozen cauliflower florets

5 (6.5-ounce) cans chopped clams, drained

1 (8-ounce) bottle clam juice

2 cups Bone Broth or chicken broth

1 tablespoon dried thyme

1 teaspoon sea salt, plus more for seasoning

½ teaspoon freshly ground black pepper, plus more for seasoning

½ teaspoon cayenne pepper (optional)

8 ounces cream cheese

1 cup heavy cream

1. Select the pressure cooker’s Sauté or Browning feature and adjust the heat to medium. Put the bacon in and sauté for 6 to 8 minutes, or until crisp. Using a slotted spoon, remove the bacon and transfer to a paper towel–lined plate to drain.

2.Add the garlic, onion, and celery to the bacon fat left in the cooker and sauté for 3 to 4 minutes.

3.Stir in the cauliflower, clams, clam juice, broth, thyme, 1 teaspoon of salt, ½ teaspoon of pepper, and the cayenne (if using) until well mixed.

4.Lock the lid into place and set the steam release knob to the sealed position. Set the pressure level to High and the time to 5 minutes. After cooking, quick release the pressure. Unlock and remove the lid.

5.Add the cream cheese, heavy cream, and cooked bacon. Stir until the cream cheese is melted. Season with more salt and pepper.

6.Divide the chowder among bowls and serve.

COOKING TIP: To thicken the soup, add 1 to 2 tablespoons of beef gelatin mixed with a few tablespoons of cool water or ½ teaspoon of xanthan gum after adding the cream, cream cheese, and bacon in step 5.
